No Bake Peach Cheesecake Cups

Prep Time: 15 minutes
Yield: 10 - 4 oz. jars

No Bake Peach Cheesecake Cups
An easy no bake peach cheesecake that is low in calories.

Ingredients For the Crust

1/2 cup gingersnap cookie crumbs
1/2 Tablespoon sugar
2 Tablespoons butter, melted

Ingredients For the Cheesecake
1 Tablespoon plain gelatin
1/4 cup warm water
1 1/2 cup peaches (fresh or frozen, thawed)
1 1/4 cup cottage cheese
1/4 cup peach yogurt
1/2 cup sugar
1/2 teaspoon vanilla extract
Optional: Cool Whip and sprinkles

Instructions
Combine the cookie crumbs, sugar, and melted butter.
Press into the bottoms of 10 small jelly jars. (I used the 4 oz. mason jars) Set aside.

Stir together the gelatin and warm water until dissolved. Set aside.

Place the peaches in a blender and pulse until pureed. Add the cottage cheese, yogurt, sugar, and vanilla.
Pulse until creamy. Slowly add the gelatin water and pulse again.
Divide the mixture in the 10 jars.
Refrigerate until set.
Top with Cool Whip and sprinkles before serving if desired.

Makes 10 - 4 oz. jars.
Notes: If you want to cut the calories even more, feel free to make these without the crust.

Real Easy No Bake Cheesecake Recipe
Ingredients
Cream cheese 16 Ounce, thawed (2 packs)
Sweetened condensed milk 14 Ounce
Fresh lemon juice 1⁄3 Cup (5.33 tbs)
Vanilla extract 1 Teaspoon
Pie crust 1 , prepared

FOR GARNISHING
Strawberry/Any fruit 1⁄4 Cup (4 tbs), sliced (or canned cherries)

Directions

1. In a bowl, beat cream cheese and sweetened condensed milk on medium speed until smooth and creamy.
2. Beat in lemon juice and vanilla extract.
3. Pour cream cheese mixture into prepared pie crust.
4. Refrigerate for 3 hours or until firm.

SERVING
5. In a serving plate, slice the cheese cake, garnish with fruits and serve.
